A pecorino fresco, (simply meaning fresh young sheep's milk) cheese, the name Brinata derives from the Italian word "frost". This is in reference to it's soft, fluffy "snowy" looking rind.
The pate is off-white and riddled with eyes. It is creamy, delicious and light in taste and texture. A mild cheese that is great on a sandwhich or in wedges paired with a nice dry white wine.
